Pasta Ice cream with eggplant

Cooking Time: 30 minutes


  • Fischioni Rigati
  • Capsicum
  • Carrot
  • Chili Pepper
  • Corn
  • Eggplant
  • Garlic
  • Lemon
  • Onion
  • Parsley
  • Peas
  • Ground beef
  • Olive Oil
  • Tomato Sauce
  • Cumin
  • Paprika
  • Salt and Pepper
  • 1 C Yoghurt
  • Beet pickle
  • Corn oil (for frying the eggplant)

    Cook the pasta as instructed on the pack

    Peel the eggplants the cut it into medium dices and fry them
  • 5.
    Add the powdered garlic to the yogurt, and mix them well with some lemon juice and salt as preferred.

    Cook the ground beef with olive oil and add the capsicum and vegetables
  • 7.
    We then prepare the red sauce: It consists of a little oil with the addition of tomato sauce and then water about 100 ml until it mixes together. Then add the pasta and mix it well with the sauce.

    Now, prepare the cups of ice cream first place the pasta layer then the eggplant then the beef sauteed with vegetables
  • 9.
    Then add another layer of yogurt with garlic powder
  • 10.
    Decorate the cups with beetroot and parsley. This is an appetizer.
