Whether you’re planning a family trip to the park or going on a camping adventure in the desert, you can always prepare easy delicious meals to take along. Pasta salads are among the many dishes people like to eat on picnics, because they are so easy to make, taste delicious and can be altered to fit everyone’s taste. 

We have put together 3 of our favorite pasta salad recipes that are guaranteed to impress everyone at your next picnic. 

Pesto and Balsamic Vinegar Pasta Salad: 

This salad breaks the stereotype of a creamy pasta salad, and still tastes delicious and refreshing!

Ingredients: 

  • 1 pack Avemarie Lisce pasta from Perfetto, that is made with 100% Durum wheat 
  • 1 cup fresh cherry tomatoes
  • 1\2 cup of pitted black olives
  • 1\2 can of sweet corn
  • Freshly grated Parmesan cheese
  • Fresh arugula leaves
  • Fresh basil leaves
  • Toasted pine nuts
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Method: 

  • To prepare the pesto sauce: ingredients: fresh basil leaves, 4 cloves of garlic, 3 tablespoons of pine nuts, 6 tablespoons olive oil, half a cup of parmesan cheese, and salt and pepper to taste. Mix all the ingredients together in a blender until you achieve a smooth consistency. 
  • Cook the pasta according to the instructions on the pack.
  • Add the balsamic vinegar and olive oil and a tablespoon of the pesto sauce to the cooked pasta. 
  • Add the cherry tomatoes, black olives, corn, and arugula leaves to the pasta.
  • Add the parmesan cheese to taste.
  • Garnish with basil leaves. 


Chicken Caesar Salad with Vermicelli: 

This recipe is a beautiful combination of two crowd favorites, Caesar Salad and delicious pasta! 

To prepare this recipe, you will need the following ingredients: 

  • Perfetto Vermicelli pasta that is made of 100% Durum Wheat
  • 1 chopped lettuce head
  • 3 pieces of toast
  • 1\2 cup of cherry tomatoes
  • 1\2 cup of Parmesan cheese
  • 500 g of chicken breast

Dressing ingredients: 

  • 1 garlic clove, crushed
  • 2 tablespoons high quality mayonnaise
  • 1 teaspoon Dijon mustard
  • 1\2 a lemon’s juice
  • 1\2 teaspoon salt 
  • 1\2 teaspoon black pepper 
  • 1\3 cup of extra virgin olive oil
  • If you prefer a little bit of extra saltiness, add 3 pieces of Anchovies


Method: 

  • Cook the pasta according to pack instructions.
  • Cut the toast into cubes and toast it in a pan with some olive oil.
  • Cut the cherry tomatoes into halves
  • Wash the chicken breast properly and grill it in a pan with a little bit of olive oil and season to taste. Cut the cooked chicken breast into long strips.
  • Mix all the dressing ingredients together and set aside. 

Mix all the salad ingredients together, but keep the dressing on the side until it’s time to serve.


Low Carb Pasta Salad: 

And for your family members who prefer lighter salads, we’ve come up with this healthy, nutritious, and tasty salad using Perfetto’s Low Carb High Protein Pasta, which is the best option for anyone watching their carb intake.

Ingredients: 

  • 250 g Perfetto Low Carb Fusilli Pasta
  • 200 g chicken breast, cut into cubes
  • 40 g of Spinach
  • 20 g grated Parmesan cheese
  • 30 g walnuts
  • 2 onions, finely chopped
  • 2 garlic cloves 
  • Salt and pepper to taste

Dressing ingredients: 

  • 1\2 a lemon’s juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Method: 

  • Cook your Perfetto Low Carb Fusilli pasta according to pack instructions.
  • In a pot on medium heat, add the olive oil and cook the onions and garlic until soft for 3 minutes.
  • Add the chicken, Italian seasoning, salt and pepper and cook until chicken is cooked through.
  • Add the spinach and lemon juice and cook for 5 minutes.
  • Add the pasta to the chicken and add the walnuts. Mix well.
  • Add the parmesan cheese and dressing to the salad when it’s time to serve it.
