Devotion to pasta has led to innovations in methods; unique and modern recipes are being created that move away from the convention and give us something different.

Apple Raisins Pasta Pudding with Perfetto Spaghetti


  • 1 Pack Perfetto spaghetti pasta
  • 6 tbsp butter, divided
  • 2 apples, peeled and diced
  • 230 gm cream cheese, softened
  • 1 ½ c Milk
  • ½ C red raisins
  • 230 gm Cottage cheese
  • ¾ C Sugar
  • 2 tsp vanilla extract
  • ½ tsp cinnamon
  • 6 eggs, beaten
  • 1 apple sliced thinly for garnishing


1. Preheat the oven to 180 degrees, grease a cheesecake tray with butter and set aside.

2. Cook the pasta in boiled water for 5 minutes, drain and set aside.

3. In a large bowl mix cream cheese well, milk, and butter. Add cottage cheese, sugar, vanilla, cinnamon and beaten eggs and mix until well combined.

4. Fold in the cooked pasta, apples and raisins. Transfer to the baking tray, arrange apple slices on top.

5. Put in the oven for 45 minutes or until cooked well.

6. Leave to cool down for 10 minutes and serve hot.

Butternut Squash & Goat Cheese Pasta Salad


  • 1 pack Penne Lisce Pasta.
  • 1 small pumpkin, peeled, seeded and diced
  • ½C olive oil, divided
  • Salt and black pepper to taste
  • 2tbsp mustard
  • ¼C apple-cider vinegar
  • Pinch of cinnamon
  • ½C pine nuts
  • 2tbsp fresh thyme leaves
  • ¾C crumbled goat cheese


1. Cook the pasta by following the instructions written on the pack, drain well and then set aside.

2. Preheat the oven to 200°C. Line a baking sheet with parchment paper.

3. Arrange the pumpkin in an even layer on the baking sheet and drizzle with 2tbsp of the olive oil. Season with salt and pepper, and then roast until lightly golden and very tender, 20 to 25 minutes.

4. While the squash roasts, whisk the remaining olive oil with the mustard and vinegar to combine. Season the dressing with the cinnamon, salt and pepper.

5. Toss the cooled pasta with the pumpkin, pine nuts and thyme. Add the dressing and toss well to coat. Finally, add the goat cheese and mix gently to combine and serve.
