Keto Pepperoni Pasta Salad

  • 1 pack Low Carb High Protein Fusilli Pasta
  • 1/8 C olive oil
  • 1 C corn
  • 1 C chopped capsicum
  • 1 ttsp Italian seasoning
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • 110 g cheddar cheese cubed
  • 110 g mozzarella cheese cubed
  • 1 C cherry tomatoes halved
  • 110 g pepperoni cubed
  • ½ C parmesan cheese


Method

  1. Boil the Perfetto low carb pasta al dente, drain, and set aside.
  2. Add rest of the ingredients into the boiled pasta and combine well.
  3. Serve chilled with a garnish of parmesan cheese. 


Keto Summer Mayo Salad

  • 1 pack Spaghetti Low Carb High Protein Pasta
  • 2 tbsp low fat mayonnaise
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Dijon mustard
  • 2 tbsp chopped multi-coloured capsicum
  • 2 tbsp onion, chopped
  • 2 tbsp grated carrot
  • 3 tbsp salad leaves
  • 1 C steamed cauliflower, chopped into small pieces


Method

  1. Cook the Perfetto pasta, drain and set aside in a bowl. 
  2. In another bowl combine all the vegetables and mix them with the cooked pasta.
  3. In a smaller bowl make the dressing by adding in the mayo, mustard, salt, and pepper. Mix well. Pour in a little water if it is too thick. 
  4. Pour over the mayo mix into the salad and pasta bowl and combine gently. 
  5. Chill overnight before serving.
